Boiled Corn, Groundnuts and African Plum Platter

Tis the season for your fall favorite recipes!

Fall season brings forth delicious snacks like roasted corn and peanuts. However, if you’re back in Cameroon you get the privilege of enjoying this snack year round with the perfect pairing of fresh African plums. Together, this trio is the epitome of Cameroonian Street food excellence!

In Cameroon, roadside vendors selling boiled/roasted corn, groundnut, and plums seem to be at every corner. It’s a popular snack especially for those on the go. During the rainy seasons in Cameroon, corn, groundnut, and African plums are available in abundance and is best eaten either broiled or roasted under a charcoal fire. 

The African plum is an exotic fruit with a sharp, savory, sour taste and a smooth texture that’s similar to an avocado. Combined with the crunchy texture and lightly sweet taste of the corn and the groundnut, it is a palette combination like no other and highly addicting! If you send your hand in once, know that you will send it in again and again (so you have been warned!) 

How mother nature made it possible for these three crops to be produced and harvested during the same time period, I will never know but I’m glad she did it and you will be too! This quick recipe is also great as an appetizer to entertain guests especially during the holiday seasons when these ingredients are in abundance. I am fortunate to live in the state of Maryland, U.S.A (a.k.a little Cameroon ha!) where Cameroonian foods, including plums, are available and accessible in grocery stores throughout the year. Dish: Cameroonian Boiled Corn, Groundnut, and African Plums

A F R I C A N P L U M R E C I P E

Ingredients

a. 3 Fresh Corn Cobs

b. ½ Pound Fresh Groundnuts

c. 5 African Plums 

d. Pinch of Salt (Optional)

Instructions

1. Wash the plums with tap water and place them into a bowl. Add hot boiling water into the bowl stir the plums gradually until it becomes soft. This process should take about 1-2 minutes. 

Set African plums in boiled water.

2. Gently remove the plums from the bowl and transfer them into a clean plate and add a pinch of salt to taste then set aside.

3. Thoroughly wash the corn and place it into a pot. Add water and cook on medium heat until it's done then remove the corn and place into a serving plate at set aside.

4. Thoroughly wash the fresh groundnut and place it into a pot. Add water and cook on medium heat until it's done then remove add set aside

5. Serve the corn, groundnut, plum, and enjoy with palm wine.
