Escape Quarantine Lockdown With This Creamy Tropical Carrot Smoothie Recipe

Looking to escape your quarantine lockdown? All you’ll need is a few ingredients, a juicer and a blender to create the perfect escape into tropical paradise. This tropical carrot smoothie is a combination of fresh carrot juice blended with some of your favorite tropical fruits to create a creamy delight.

Unlike other countries in Africa, Cameroon consists of all the different kinds of geographical regions in Africa in one country. This allows for an array of various produce to thrive in different parts of Cameroon and tropical fruits are no stranger to this land. In littoral region cities such as Mbanga, Penja, Njombe, Souza and Dibombari tropical fruits like papaya, oranges, mangos, pineapples, grapefruit and tangerines grow in abundance. 

As a mango lover, this is by far one of my favorite smoothie recipes. Not only does it taste fantastic but it’s also full of some much needed vitamins, minerals and fibers that can boost and strengthen your immune system during this coronavirus pandemic.

Kitchen Tools

Juicer

My juicer of choice is the Cuisinart Juicer. It has five speed levels that work phenomenally with food produce of various textures. It’s also extremely durable. I’ve had this juicer for 8 years and have yet to experience any technical problems.  

Blender

My blender of choice is the Ninja Blender. The blender has 10 Auto iQ Programs that allow me to grind both dry and wet ingredients to any consistency I desire.

Ingredients for Tropical Carrot Smoothie

a. 1lb Carrots

b. 1 lb Frozen Pineapple

c. 1 Ripe mango chopped

d. 1 Orange 

e. A small piece of fresh peeled ginger

Preparation

1.Wash carrots and put it through a juicer to extract the carrot juice.

Note: If you don’t have a juicer, slice the carrots into small pieces and blend with a small quantity of water to ease the blender blades. Afterwards, strain the blended carrots into a bowl to extract the juice without the fibrous pulp. This will ensure that your smoothie is creamy in consistency.

2. Peel and slice the orange and put it through a juicer to extract the orange juice. 

Note: If you don’t have a juicer, use a blender and follow the directions in the previous note.

3. Pour the extracted carrot juice and orange juice into the blender and add the pineapple, mango, ginger and ice blocks.

Note: Add the amount of ice blocks to your taste. 

4. Blend all ingredients on medium-high speed until it reaches a creamy consistency.

5. Serve the smoothie and enjoy!
