Cameroonian Christmas Jellof Rice

Christmas Day, New Year’s Day, and Birthday Parties are just some of the celebratory events where you can see Cameroonian Jellof Rice at the center of the table served in mom’s most expensive chafing dish. This one pot dish which consists of rice cooked in a tomato based sauce is a signature dish in Cameroon and in other West African countries ( like Nigeria, Benin Republic,Togo, Ghana, Liberia, Sierra Leone, Ivory Coast, Guinea, and the SeneGambia) where it’s often called “Jollof Rice”.

Banana Bread/Cake

The banana bread recipe was created  and supported by the popularization of baking soda and baking powder in the 1930’s. Published by Pillsbury's 1933 Balanced Recipes, it quickly became a standard feature in Western cookbooks. While the colonial masters reigned in Cameroon, they brought such recipes with them. My home in Limbe, Cameroon was a town greatly influenced by Western colonial culture. British colonials planted schools in Limbe that were invested in teaching women domestic science. Baking (a colonial culinary culture) quickly became an activity practiced in every Limbe household and banana cake (as we called it) became and all year the staple recipe and sweet treat for Christmas.

Folere/Sorrel/Hibiscus Tea

This easy and refreshing Hibiscus Tea recipe is perfect for any season, but it has a special place in my heart during the holidays. Folere, also known as Zobo or Sorrell, is a drink made from the petals of Hibiscus. Its festive color palette also holds a bold flavor in taste as well. A good chocolate chip cookie reminds me of the times in Cameroon when I was young and enjoyed sweet chocolate treats with my friends. Back then in Cameroon, the chocolate of choice was always Mambo Chocolate. What an unforgettable taste! Cameroon has always been a top cultivator and exporter of cocoa. It did not matter how old or young you were, Mambo chocolate was enjoyed by all. Customize this recipe by using your favorite chocolate brand and enjoy this fantastic twist of the chocolate chip biscuit cookie with a warm cup of whatever you like to sip with your desserts as you unwrap the Christmas gifts delivered by Santa.
