TAPÉ TAPÉ: The Non-Traditional Fried Plantains/DoDo

Fried plantain also known as dodo is a staple snack that is highly consumed in West African countries. It is a multipurpose snack that goes as a side to numerous dishes such as Jollof/Jellof rice, roasted chicken, roasted fish, sautéed gizzards, tomato stew, sautéed snails, and more. Now have you heard about or ever eaten Tapé Tapé? what I call dodo remix. It is made using partially ripe plantains and cooked in a non-traditional method that is similar to making Tostones. The non-traditional method involves flattening the plantains from which comes the name (Tapé Tapé meaning to beat in French). The flattened plantains are then deep-fried in hot oil for a golden brown crunchy texture on the outside and soft and yummy texture inside. Just like the dodo, Tapé Tapé is becoming a preferable snack to accompany sautéed dishes in Cameroonian homes.
